AUSTRALIAN FREEZE DRIED POWDERS

Milled, freeze dried whole berries of the Kunzea pomifera species, a tiny berry when ripe are green with a red tinge and have a flavour of spicy apples.

Also know as muntries, emu apples or native cranberries are native to the south coast of Australia. They hold a significant place in the historical diet of the Narrindjeri people of the Coorong in the south-east of South Australia. The fruit played a major part in their diet, not only when fresh, but also after being dried and stored for the winter months.

This fruit powder is packed with phyto-active compounds for flavours, food colouring, 'superfood' and cosmetic products.

FREEZE-DRYING PROCESS : LYOPHILISATION

  • Freeze-drying or Lyophilisation is a method of drying food without destroying its physical structure, chemistry and natural composition; maintaining the integrity of its phyto-active compounds with little or no alteration;
  • Freeze-drying works by freezing the material and then reducing the surrounding pressure to allow the frozen water in the material to sublimate directly from the solid phase to the gas phase.
