AUSTRALIAN FREEZE DRIED POWDERS

Milled, freeze dried whole limes of the Citrus glauca species, a tiny native Australian fruit found occurring in semi-arid regions in eastern Australia. It grows in inland woodlands and brigalow scrubs and is able to withstand extreme temperature conditions.

The Desert Lime is a powerful source of antioxidants including Vitamin C, Phenolic Acids, Flavonone Glycosides, Lignan and Courmarin Derivatives.

  • Desert Limes were eaten raw by Indigenous people, however European settlers preferred to use them in drinks and jams because they are so low in sugar and high in acid;

  • Desert Limes are viewed as a traditional Australian food by FSANZ and are listed for inclusion in the Codex Alimentarius.

FREEZE-DRYING PROCESS : LYOPHILISATION

  • Freeze-drying or Lyophilisation is a method of drying food without destroying its physical structure, chemistry and natural composition; maintaining the integrity of its phyto-active compounds with little or no alteration;
  • Freeze-drying works by freezing the material and then reducing the surrounding pressure to allow the frozen water in the material to sublimate directly from the solid phase to the gas phase.
