Milled, freeze dried plums of the Davisdonia jerseyana species, a native Australian tropical rainforest fruit.

The Davidson Plum is a powerful source of antioxidants including Anthocyanin, Phenolic Acids, Flavone Glycosides and Flavonones. It's dark blue/black plums have a vibrant dark red flesh creating a vivid crimson red powder packed with phyto-actives for flavours, food colouringand cosmetics.

NUTRACEUTICAL POTENTIAL APPLICATIONS

  • Davidson Plums are not used as a fresh fruit due to the intense fruit acidity and low sugar content;
  • Davidson plum products are available in supermarkets and specialty stores in value added form like Davidson Plum yoghurt, jams, sauces and drinks;

FREEZE-DRYING PROCESS : LYOPHILISATION

  • Freeze-drying or Lyophilisation is a method of drying food without destroying its physical structure, chemistry and natural composition; maintaining the integrity of its phyto-active compounds with little or no alteration;
  • Freeze-drying works by freezing the material and then reducing the surrounding pressure to allow the frozen water in the material to sublimate directly from the solid phase to the gas phase.

  • Freeze dried fruit milled to a fine powder;
  • Packed in a cool dehumidified climate controlled environment.
